Orthodox thinking in modern society means the generally prevalent, or widely-held opinions on any given topic. For example, orthodox thinking about heroin addiction is that it is a really bad idea to become addicted to heroin. (And it is.)

There are many different orthodox beliefs. There are Orthodox Jews who share many beliefs with other Jews but are more strict in some of their beliefs and applications. There are Orthodox Muslims who share many beliefs with other Muslims but are stricter in application of some practices and beliefs. There are orthodox Christians, some of whom follow the Eastern Orthodox Rite. There are also orthodox Christians who are Roman Catholics and do not follow the eastern orthodox rite but are orthodox in the sense of their trying to follow what they believe are old established ways, which is what the word "orthodox" actually means.

What does Thoreau mean when he says that people begin digging their graves as soon as they are born?

He means that most of modern society is rooted in debt, slavery of all figurative and literal sorts and vanity. That most of modern societies "necessities" become traps and hindrances to truly living a simple and free life. Most of modern society even in Thoreau's day were "digging their graves as soon as they are born" if their graves were not in some sense already dug for them through cumbersome inheritance. Carefully read Walden through and you will see him continue to explain what he means through his observations of society and his own discovery of personal freedom.

What language is orthodox mass spoken in?

Orthodox Christians do not refer to it as mass, but the Divine Liturgy. What language it is performed in depends on the church's ethnicity, though most Orthodox churches in America do it mostly in English. If it is a Greek church, then it is partially in Greek; if Russian, then in Russian; etc. But, like I said, the majority is done in English. In Antiochian Orthodox Churches, the entire liturgy is in English.

What do Jews believe about dating?

It depends on which denomination within Judaism you are talking about. Non-Orthodox Jews generally follow the customs and social norms of the society they live in. Orthodox Jews vary. Strict, "ultra-orthodox" Jews have no dating at all. They generally rely on parents or other family to help find potential spouses. Modern Orthodox Jews may date, but it depends on the family and some families will require a chaperon.
