If the pH of Apple Cider Vinegar is somewhere around 2.5, then I would put the pH of apple cider anywhere from 2.5-3.

I kind of doubt it. You can actually drink apple cider. Apple cider vinegar is only drunk by people who subscribe to quack health theories.
