There are no records of any inventor for ricotta. The cheese itself exists at least since the sixteenth century, as proved by Vincenzo Campi's rather gruesome painting Ricotta eaters, dating back to the 1580's.
well pasta is common, pizza is common, but you could make a turkey broccoli pasta casserole with riccota cheese on the top also you could have a nice osso bucco. it depends what region of Italy though, as the cuisine varies so much.
Plain yogurt is made the exact same way, only they use low fat milk instead of full fat cream. It makes a great healthy version. Always remember, a good cheese cake always has lemon juice in it.
