In Biology the term 'analogy' is used to describe a similar feature in a different organism, which of course is possible for most of a lobster's features. In the loose sense, one might say the freshwater crayfish is analogous to the salt-water lobster.

In a limited sense. One definition of analogy is an agreement in details or features, which lobsters and crabs share; but, the words crab and lobster in common usage have distinct and separate meanings; a crab is not a type of lobster nor is a lobster a kind of crab. Probably a matter of opinion but it would seem to stretch credibilty to take license for direct substitution of one for the other in literature. It might be better to say they have analgous characteristics or analogous structures. The term analogy is used in evolutionary biology do describe a common descent: indeed, crabs and lobsters do share a significant portion of their taxonomy, for example, those categories which describe marine crustaceans.
A rock lobster is just a distinct type of lobster. There are many kinds of lobster, such as the rock lobster and the blue spiny lobster.
