Stitch length is going to depend greatly on the fabric. You are going to use a longer stitch length on denim than you are on chiffon. That is why it is important to test and adjust your stitch length on a scrap of fabric before you begin sewing your project.

Do you mean stitch width or stitch length? If you are talking about the width, there wouldn't be any because it's just straight. If you are asking about length then it would depend on what type of fabric you are using, as well as what you are making. If you are going to top stitch then the length would be longer. Fabrics that are knits, or are stretchy, would require a longer length than woven fabric. It also depends on how heavy the fabric. The heavier the fabric, IE. denim, the shorter the length.
