I would highly recommend a cob as they are very sweet natured and calm. They are also very easy to do in such ways as grooming, hacking and riding in general.

Breed is ne of the last things you should be looking at for a novice horse. The breed nor color matter so long as the horse is properly trained and well behaved.
Novice horse means that the horse has gone novice and the rider hasn't, and novice rider means that only the rider has gone novice, not the horse.
