Any degree that puts you in a profession that gives you the flexibility that, as a stay at home mom, you desire. For example, I once knew a woman who had 5 daughters, went back to school to get her PhD in Psychology and became a very well paid psychologist with her own practice. She'd bring her daughters with her when she had clients, had a babysitter sit with them while she saw clients and then would leave around noon or 2 pm for the day, girls in toe. This was ideal for her situation. Look up and find the right career first, one that gives you flexibility. Then find out what degrees you'd need, as a requirement, to attain that particular job.
