Well, basically, it depends on your fighting style. Most jedis and sith prefer single bladed, since it is easier to master. Others prefer two lightsabers, since it is easy to master, and is fierce. Not many jedis and sith use the double bladed lightsaber, since it is the hardest and most feared lightsaber of them all. Some jedis and sith actually killed themselves trying to master the double bladed lightsaber!
I agree with you, but the only Jedi or Dark Jedi and Sith lords I know that have more than one lightsabers or double lightsabers are General Grievous, Darth Maul, and Asajj Ventress. And also I don't know anybody who died doing that.
