Capsaicin is the chemical that makes chili peppers hot.

Capsaicin is also extremely potent, as the hottest pepper in the world the Naga Jolokia (a.k.a. Ghost pepper) is around 855,000-1,050,000 Scovilles (The scale for measuring how hot a particular pepper, or spicy food is), while pure capsaicin rates around 15,000,000-16,000,000.

You can read more about Capsaicin athttp://en.wikipedia.org/wiki/Capsaicin, and you can learn more about the Scoville scale at http://en.wikipedia.org/wiki/Scoville_scale.
