Butterfly needles come in several gauges - 21, 23, and 25-gauge.
There are many accessories that are required for pressure gauges. Some of them include pressure snubbers, siphons, throttling devices, needle valves and so much more.
I may be mistaken, but I don't think you can change the gauges. I think I recall seeing here, that you must replace the entire instrument cluster.

a 25 Gauge needle is capable of drawing blood, but i would go with 21 or 23 for withdrawing lots of blood simply because the 25 gauge could get clogged..
