Observing means to keep a close eye on an object. Watch its every move and/or transformation, study it. Ex. When doing a science experiment you have to OBSERVE in order to know what the result is. Ex. We OBSERVED the animal being released into it's natural habitat, making sure he knew how to survive and was ok.
