An offering is something of substance given to another, beit in thanks to God or to help another:

"...Jesus saw the rich putting their gifts into the Temple treasury. He also saw a poor widow put in two very small copper coins. God gets the offering in any case.

Sacrifice is the "attitude" in which the offering is given.

"...thou desirest not sacrifice; else would I give it: thou delightest not in burnt offering; The sacrifices of God are a broken spirit: a broken and a contrite heart, O God, thou wilt not despise..." (Ps.51:17).

"Wherefore by their fruits ye shall know them. Not everyone that saith unto Me, Lord, Lord, shall enter into the Kingdom of Heaven; but he that does the will of My Father which is in heaven. An offering is the gift. The sacrifice is the motive for the gift.

A person in ancient times offered sacrifices to God in return for forgiveness, its how they repented. They simply offered up in smoke (the actual sacrificing) the very best of their produce or animals since this was dear to them and a means by which they made a living.

"The person giving the sacrifice had to be clean as explained in the Law. If he was not clean, he would first have to make a sin offering or a guilt offering so that he could again have Jehovah's approval. Only then would Jehovah accept his voluntary sacrifice. (Leviticus 5:5, 6, 15)"
