A commis is anapprentice in larger kitchens that works under a chef de partie in order to learn the station's responsibilities and operation.[ This may be a chef who has recently completed formal culinary training or is still undergoing training.

A chef is a person who cooks professionally. In a professional kitchen setting, the term is used only for the one person in charge of everyone else in the kitchen, the executive chef.

Chef de cuisine is the working chef in the restaurant & in charge of the kitchen & execution of what's coming out of the kitchen. Whereas, the executive chef oversees all staff & restaurant(s) & doesn't do the day-to-day cooking.

A commis chef would have to adapt to working in every area of the kitchen, which they spend roughly six months at until they rotate to the next station. It can be a very stressful environment to work in, as they are expected to work around the clock.
