Conduction transfers heat by direct contact. Convection, is the transfer of heat by movement of the medium, due to difference of density caused by changes in temperature.
It's a different way to transfer heat. One object emits electromagnetic radiation (for example, infrared - though it depends on the temperature); another object absorbs it. Heat transfer through radiation can occur in empty space; with conduction and convection, that's not possible.

A traditional conduction oven has a heat source at the bottom and bakes from the bottom up. Whereas convection has a fan blower that circulates the heat all around the food cooking much more evenly and faster.
