It is more than simply the colour that differentiates the two. In terms of what they are used for, green grapes can be made into sultanas or white wine, and red grapes can be made into raisins and red wine.

They both have the same origin, and considering that there are so many variations of both, it is hard to say that one is different in a particular way to the other. But generally speaking, red grapes are better for memory retention and have a stronger taste than green; green grapes also tend to be sweeter, on average.
