Server OS's usually have no/minimal user interface, and only do as much as they are supposed to do.
Desktop OS's on other hand usually have robust GUI's and feature support for lots of things never or rarely used by servers(printers, bluetooth, WiFi, etc.)

For Servers the graphical desktop is not installed automatically; it has to be explicitly added after the Server software/OS has been installed. For Windows, a special stripped down version is known as Server Core. For Server 2008 Server Core cannot have a graphical desktop but for Server 2012 you can add it later.
