Well, there are probably dozens, but here's one that I've heard of: plant cells have well-defined cell walls, whereas animal cells only have thin membranes, no walls. It's the thick cell walls that allow plant tissue to become rigid when the cell is filled with fluid - this is why plants wilt when they are not watered, and perk up when they are.... Animal cells would simply leak out excess fluid
