Turmeric belongs to the genus Curcuma. The yellow-orange color of turmeric is derived from curcumin. Turmeric is also known as Indian saffron or curcuma. Turmeric Oleoresin (curcumin) is water-soluble. Lime (CaO) in water forms Ca(OH)2 - a base. This base changes the color to red.
