There are four stages to the Estrous cycle, which include Proestrus, Estrus, Metestrus and Diestrus, as follows:

Proestrus is when the follicles attain final growth and secrete estrogen, which causes the cow to come into heat.

Estrus is the period where the cow is the most receptive to breeding with a bull.

Metestrus occurs 12 hours after the end of standing heat, and is when ovulation occurs. This is the time where the corpus luteum forms and produces progesterone.

Diestrus, the longest time of the Estrous cycle, is when the corpus luteum continues to produce progesterone in the hope that sperm will have fertilized the ovum during this time. If not, then the CL regresses at the end of diestrus (which is at the end of the 21 days after her initial estrus period), and the cycle begins again.

The cow or heifer will be bellering a lot, pacing the fence line, acting more nervous and active than her normal self, and the other cows may be chasing after her too. Often a cow that is going into standing heat (or is already in standing heat) is the one that's being ridden. When there's a bull present, he will be hanging around and chasing after this cow that's in heat, and attempting to mount her. Bulls typically only bother those cows that are in heat, and leave those others that are not in estrus.

The estrus period is the time when a cow or heifer is the most sexually active or receptive, and is the time when she will allow the bull to mate with her. Estrogen levels are high during this period (which only lasts for ~24 hours), and her behaviour during this period changes dramatically, from quiet and docile to excitable, vocal, and moving around a lot. She will ride other cattle and other cattle will ride her during this period.

Cows do not have "periods," nor menstrual cycles like human females do. Bovine females (being cows and heifers) have what is called the Estrous cycle, which is defined by a brief (24 hour) estrus period--a time when the bovine female is sexually active and looking for a mate--a 2- to 3-day long follicular phase and a 15- to 17-day-long luteal phase. Cattle do not shed the endometrium layer, the only bleeding that occurs is from a swollen capillary layer in the caruncles (which are located in the uterus) that discharge a little blood a few days after the cow or heifer has gone out of heat or estrus. But not heavy bleeding like that experienced by a teenage girl or a 30-year old woman.
