Most multicellular organisms... and some unicellular organisms... do have cell nuclei. The general term for these is eukaryotes. Some specialized cells in multicellular organisms have no nucleus. For example, mammalian red blood cells have no nucleus. The generic term for any cell without a nucleus, whether a prokaryote or a specialized cell in a eukaryote, is anucleate (which simply means "without a nucleus").
