Pax Cakes In some English churches small buns or biscuits called pax cakes (from the Latin for 'peace', pax) are given to the congregation as they leave after a Palm Sunday (the Sunday before Good Friday)service. These cakes, bearing the image of a lamb and/or bearing the words 'peace and good neighbourhood' (symbolic of peace and goodwill) are handed out by the priest to the congregation as they leave church, The churches of King's Caple, Hentland, Sellack, and Hoarwithy-all now in Hereford and Worcester-have a tradition of distributing small buns on http://www.answers.com/topic/palm-sunday after the morning service; they are called pax cakes, signifying reconciliation and goodwill. It was established in 1570 by a local landowner, Lady Scudamore; in the 19th century, local farmers provided cider and ale (Leather, 1912: 97-8). Beat one egg. Add and beat until smooth:
1 cup sour milk or buttermilk
2 tablespoons salad oil (salad oil is any vegetable oil)
½ cup whole wheat flour
¼ cup wheat germ
¼ cup white flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon soda
½ salt
Grease a heated skillet or griddle. Pour batter from jug onto the hot griddle in
3 to 5 cm diameter dollops. Turn the pax cakes when bubbles show.
Heat on the second side until brown. Sprinkle with powdered sugar. Cinnamon may be added if desired.
Makes 30-50 pax cakes.
Variation: Use 1 cup white flour, instead of combining whole wheat flour, wheat germ, and white flour. This practice has been introduced by Revd Dr John F Kennedy at the parish churches of St Laurence, Northfield, and St George Edgbaston, both in the diocese of Birmingham, England.
