On the surface of the earth, it holds everything down and in place. Without it, one would float away into space, or have to have a method to tie everything down.
Similarly, it was vital in the accretion of elements and compounds in the formation of planets and the stars. It gives the planets and the stars a roughly spherical shape (with the surface equidistant to the center), and holds the atmosphere (the air) in place.
If gravity was to vanish, the planets and stars would loose the atmospheres, and eventually just float apart.
It also creates an orbital system with planets orbiting around the sun. Without gravity, that would not be possible, and nothing to keep the earth from floating away from the sun, and freezing.
