I'm not sure about this, but I think if you know the pH value of the soil, then you can plant specific plants and crops and they will not be harmed by the soil. ;)

Lime does raise the pH level of your soil; however Sulphate is the one that lowers it.
The pH leve of soil depends upon it's fertility. If the soil is used to fertilizers or pesticides, it becomes acidic, loses it's fertility and pH level goes down.

While I cannot give you a properly researched answer, I just did an experiment on this exact same question, and founf that a pH of 6 was the best for bean seeds.
