Human Biology isn't simple. We depend on a lot of body parts working together to make the whole body function normally.

Given all that, I would say that the brain was the most important part because it controls the rest of the body, eg the heart beat, the rate of breathing, digestion, fighting off infections, the hormones, blood sugar etc. All these things - and many more - rely on instructions from the brain in order to function.
