It depends which MacBook model you are asking about.
The original MacBook CoreDuo was limited to 2 GB total RAM with two 1GB modules.
The plastic MacBook models from 2007 to 2009 could take two 2GB modules, although the earlier models could only utilize 3.0 GB of the total. SantaRosa chipset models and later could recognize 4 GB.
The Aluminum MacBook can take 4GB DDR3 modules.
The latest MacBook Pro models can take 8GB modules.

You can't add additional RAM to a Macbook Air because the RAM module is soldered onto the motherboard. Apple has been migrating this way with a myriad of devices including the iPod, iPhone and iPad product lines.
