The head of the Catholic Church is Jesus Christ. He appointed Peter as the earthly head of His Church, or Pope. The position of the Pope has been handed down uninterrupted from one to the other since St. Peter, 2000 years ago. Pope is a term derived affectionately from the word Papa meaning Daddy. In terms of authority, the Pope is the Vicar of Christ meaning he is Jesus Christ's chief representative on earth. In simple terms he is Christ's CEO on earth, is appointed by a secret ballot of Cardinals and holds that position until death.

Mostly God, although sometimes we call Him Our Blessed Lord, Jesus Christ. You may be asking about His Vicar on earth. He appointed St. Peter as His first vicar in Matthew 16:17-19, currently he is Pope Francis in the Vatican in Rome. The Pope is mostly referred to as the Holy Father, or just the Pope.
