If you feel a fruit cake for the wedding would be appropriate and appreciated then make it up (soak it in brandy for at least 2 - 4 months ... the longer the better) then ship the cake over to Australia and have a bakery ice the wedding cake. Be sure to have a professional package the wedding cake for you so it will endure the journey.
