With 1000 rolls of a die, and each number having a probability of 1/6, I would not expect any peaks.
If you mean between two positive, or two negative, peaks of an electrical wave, it's the wavelength. If it's a pressure wave, "peak" is usually taken to mean "maximum pressure", so it would be between "peaks".

Unfortunately, there are also some problems with the use of the autocorrelation. Voiced speech is not exactly periodic, which makes the maximum lower than we would expect from a periodic signal. Generally, a maximum is detected by checking the autocorrelation
