The stars are "fixed" in their positions in space. (Well, they actually do move - but because of the vast distances, they don't appear to move appreciably over the course of a human lifetime.) One of the easiest celestial observations to make is the "local apparent noon" sight of the Sun. Using your sextant, measure the elevation of the Sun above the horizon. Continue to observe the Sun as its elevation increases, and note the precise time and elevation when the Sun reaches its maximum elevation. This is a one-sight "fix" of your position. The time of "local apparent noon", compared to your watch, will give you your longitude; the elevation above the horizon makes the math easy to calculate your latitude.
