In the Catholic religion, the sunburst on top of a cross is called a "monstrance". It is a symbol for the holy host. According to the Catholic ritual, during the Eucharistic Prayer during Mass, the unleavened flour wafer is transformed into the body of Christ, thus becoming the holy host. This process is called "transubstantiation." It is celebrated to replicate the Last Supper, which was a Passover seder, during which Jesus distributed bread and told his disciples that it was his body.
During the Mass, the hosts so transformed are then distributed by Priests and consumed by parishioners during the ritual of "communion."
There is evidence that the sunburst image, like so many Christian symbols, was borroweded from pagan tradition. Unfortunately, most explanations of pagan beliefs have been lost to history.
