Weight is sensed using a transducer. A weighing machine transducer is usually a spring/piezoelectric component. The resistance of it varies as the weight changes. So does the current through it. This current is sensed, and is converted suitably to output it's weight.
Digital scales typically work by measuring the bending force on a small spring inside the scale called a load cell. Load cells in most digital scales consist of a small metal bar with strain gauges attached. One end of the load cell is mounted to the platform, while the other end is mounted to the base of the scale. The strain gauges change electrical resistance as the load cell flexes when weight is added to the platform. This analog electrical resistance value is converted to a digital weight value using the scales analog to digital converter (ADC). To do this, the ADC must be calibrated using known weights (called calibration weights). This is done at the factory, but must also be performed periodically to maintain accuracy. The ADC sends the digital signal to the LCD which displays a weight value.
Electronic scales use piezo-electric strain gauges, which generate a voltage that is proportional to strain. The electronics converts that into a weight, based on an appropriate calibration curve.
Anything that any other scale measures. The only difference is in how the scale shows you the weight. An old fashioned, pre-historic 'analog' scale has a pointer that moves over a strip of numbers, and you're forced to figure out what number it's pointing to. This onerous task is eliminated by the 'digital' scale, which prints actual numbers on a screen.
