Shemittah is each seventh year (5775 was one of them), as commanded in Leviticus ch.25 and Deuteronomy ch.15. The main feature is that many forms of agricultural work are to be abstained from in Israel for the whole year. This command is observed by religious (Hareidi) farmers in Israel.

every seven.

People don't own land. People can enjoy the produce of the land, but they can't
force the land to produce continuously without time off. Land gets one year off
out of every seven. In that year, there is no planting and no harvest.
That year is called the Shmita year. The rules apply to land in Israel.
