There are several situations that come to mind:
1. Euthanizing an animal for humane reasons because the owner cannot afford to treat.
2. Refusing to treat an animal because the owner cannot or will not pay.
3. Euthanizing an animal because an owner cannot be found for it and there is not enough room at the shelter/clinic/etc. to house the animal.
The most challenging thing is surgery.

There really are no least challenging vet schools in which one can be accepted to in the U.S. or Canada. This is because the standards and requirements needed to graduate from these schools will always be the same.
For the most part, you attend class and study. Vet school is a challenging field to study and many students spend the majority of their time studying and learning.
Most vet colleges will have this sort of program, you can also check at local pet stores and vet offices for this sort of thing - they might even have someone on site that can help you!
