It depends on the person. There are two normal Harvest Moons for the PS2 and one Spin-Off game. The two normal games are Save the Homeland and A Wonderful Life Special Edition.
Save the Homeland it shorter than other Harvest Moon games. The plot is you must complete a chain of events that lead you to an "ending". If you do not get an "ending" you lose. There are many "ending" to get. You can not get married and once you finish an "ending" you will have to start over.
A Wonderful Life Special Edition will also eventually end after a certain amount of time. But it is much much longer. This game is just a better version of the original Gamecube game. When you play this game you are living out someone's life. You get married and have a child. You and everyone else gets older. You go through chapters and with each chapter there are changes.
The Spin-off game is Innocent Life. It is a "Futuristic Harvest Moon" and quite different from a normal Harvest Moon game. You play as a Robot boy and go though a real plot line.
I personally like A Wonderful Life Special Edition best. But it is all opinion.
