Animals are appealing to the public, they showcase things that may be exotic to them, or something they have never seen or experienced. This brings the film of movie onto a different physiological level of appeal. They are also cute and weigh your opinion towards the movie more kindly. Or the animals calls for the part of an animal. Forest Gump
Because the movie is intended for children, and it wouldn't sit well with the parents if the bulls in the Barnyard movie where pictured with testicles and a sheath where the penis is instead of the more "accepted" picture of the bulls having udders instead. To me it makes no sense, as the movie fails to educate the young ones of the real barnyard life that exists out of the cities they live in. They have these animals that stand up on two feet and talk like humans do, plus are able to do human-like things that humans do, not things that REAL farm animals do.
