the chemicals that help us digest food are called enzymes. They are bio-chemicals or bio-catalysts which help in breaking down complex food molecules into simple sugars and amino acids. Remember that the human body is a cocktail of enzymes.

There are a host of different chemicals that help you digest your food in your gastrointestinal tract. Only a small portion of them are actually in your stomach. Your stomach has acids, like HCl, pepsin. Plus other digestive juices like gastrin and intrinsic factor. But, the large majority of your digestive chemicals actually comes from your pancreas. It supplies the small intestine, the section called the duodenum, with all the digestive chemicals, called enzymes, that it needs to digest all types of food; proteins, carbohydrates, and fats.

Since the stomach only partially digests proteins, you can actually live without it. Ask anybody that has had a gastric bypass surgery. You really don't need it. But, you can't live without your pancreas and duodenum!
Enzyme, could be lipase for lipids (fats), amylase (for starchy foods i.e. pasta, rice,potato) or maltase (digests maltose). These are only a few enzymes, there are many more.

There are several substances that aid in the chemical breakdown in the digestion process. Bile is produced by the liver, HCL acid is produced by the stomach and enzymes are produced by the pancreas.

lipase- breaks down fats, lipids

amylase, sucrase, galactase, fructase- all enzymes that break down carbohydrates

Pepsin, protease- both do protein
