Heat is transferred by convection and by radiation in a conventional gas oven.

In an electric oven heat is transferred by radiation only. In a microwave oven, radar waves bombard the molecules within food, bouncing them around enough that the friction produced causes heat to build up within the food.

There are three different methods of heat transfer occurring in this instance.

First is Radiation. Infrared energy is emitted from the heat source (electric element or gas flame), the same way you feel heat on your face while sitting in front of a campfire.

Second is Convection. The air surrounding the heat source collects energy and the molecules move further away from each other making them less dense, so they rise above the cooler air, much like oil poured into water will rise to the surface.

Third is Conduction. As the heated air of convection rises, it transfers its energy by coming into contact with cooler objects, for example the oven rack, a cake pan, or a nice Prime Rib Roast (yum!).
