Yes you can. First start a new game. (Make sure either Pearl or Diamond already contains Shaymin.) Then play your way through the game until you reach Florama town. Before you actually enter Florama Town, do a trade with either Pearl or Diamond and receive Shaymin. If Shaymin is in your party, talk to the girl at the front of the town. She will give you a Gracadia Flower. (Key Item.) Give the Gracadia Flower to Shaymin and it will trasform into Sky Form Shaymin. Note: Shaymin can only stay in Sky Form if: 1. It's daytime 2. It currently has no status problem (Maybe only frozen or burn.) and 3. Shaymin is in your party. (Meaning that Shaymin will go regular if it's in the P.C.)

i am not sure about girantina but i know parshel of the other question darkrai is found on new moon island to get there keep going east from fullmoon island with run anywhere cheat. shaymin is in flower paridise go east of elite four with run anywhere cheat and once you find the path keep on following it until you see a shiny rock and go forward over the water and you will find a path and at the end there will be shaymin.giratina gets a new form in Pokemon platinum, it is called origin form
