As tempting as it may be to link the name to the mythical elves or elfs, the name is more likely derived from "elver." An elver is a young eel about 2 years old. It is a delicacy in European cooking. The family at one time may have been "snigglers" (it's not as nasty as it sounds) or eel fishermen who caught eels by hand.
