If you mean what it's made out of, it's mostly just made out of vegetable oil, and egg yolks beated together.

Mayonnaise comes from Mahon, Spain. There it is still known as Mahonesa today.
Mayonnaise is made from mixing oil, egg yolk and either vinegar or lemon juice.

It is impossible to say for certain. Sauces similar to mayonnaise could have existed in antiquity, in any location where egg yolks were available. The recipe and name were codified in 18th century France and entered English in the early 1800s.

The French name "mayonnaise" was given to the mixture of whipped egg yolks and vinegar (or lemon juice). This is emulsified by the addition of vegetable oils.

One source for the mixture has been said to be the town of Mahon in Menorca, Spain, which lent its name to the Catalan word for the sauce, maonesa. The subsequent term salsa mahonesabecame mayonnaise in French.

Another suggestion is that it comes from an old French name for egg yolks, which is moyeu.

Certainly the mixture of oils and egg yolks would have occurred long before either of the suggested word origins.
