White Grape Juice made from concentrate gives a pH of around 2 - 2.1.
This would be more acidic than Orange Juice. someone please fix this.
I tested it today in lab class, it seems a lot but the White Grape juice we had had a pH of about 2.

there is pretty much no acidity in a grapefruit...it is only bitterness.
Acid-- it has a ph of less than 7.
I think it would be either a lemon a grapefruit (the yellow grapefruit is the most sour).
The pH of grapefruit by itself is low enough to prevent the growth of pathogens. What we don't know is the pH of the jarred product and if there has been any cross-contamination. For quality purposes, keep the opened jar refrigerated and use it within a few days.
Vinegar has a pH range of about 2.4 - 3.4. Apple juice: 2.9 - 3.3 Grapefruit juice: 3 - 3.3 Lemon juice: 2.3 Orange juice: 3 - 4
I think they are both citric acid but lemon juice is more concentrated.

There is a tested recipe for grapefruit curd in Better Homes and Garden's book "Can It!", they also have a recipe for Tangerine Marmalade. It would probably be reasonable to substitute grapefruit for the tangerines as they are close in ph. Ingredients for marmalade are: 10-12 medium tangerines, 7 cups sugar, 3 ounces of liquid pectin. The recipe for grapefruit curd requires: 1 cup sugar, 2 tablespoons cornstarch, 1 teaspoon grapefruit peel, 1/2 cup grapefruit juice, 1/4 cup water, 6 egg yolks, 1/2 cup butter.
