First group the sage sprigs into small bundles and secure them together with rubber bands. Each bundle should then be covered with a brown paper bag with slits cut up the sides. Hang the bundles upside down in a dry place, such as the porch, for about 2 weeks. Place the bundles on wax paper and crush the leaves to separate the stems out. Store the sage in jars that have tight fitting lids in a dark place that is dry or in the freezer.
