Organic compounds are not soluble in water. They can only be dissolved by organic solvents such as hexane.

Hence, in order to make some organic compounds soluble in water, hydrochloric acid can be used. This makes compounds go through reactions to take in the chloride ion. This makes the organic compound more polar by introducing a highly electronegative atom, which in this case is chlorine.

For example, alkenes go through substitution reactions with HCl:

C2H4 + 2 HCl --> C2H4Cl2 + 2 H+

C2H4Cl2, which is 1,2 dichloroethane, is soluble in water. As such, it can be extracted by adding water to the mixture to dissolve it.
