Line a flan tin with shortcrust pastry. Prick the bottom with a fork to avoid bubbling. Bake it blind.
Juice of two lemons, blend with 2 oz cornflour, make up to half a pint with water. Add two oz. sugar and bring to boil in saucepan, stirring - cook gently for three minutes, (or the modern way is to bring to boil in a microwave oven stirring now and then before it reaches boiling point, and then cook for about a minute. Let the mix cool a little whilst you separate two eggs and whisk the whites very stiffly. Gently fold in to the stiff white two oz. caster sugar.
Now add the egg yolks to the lemon mixture, mix thoroughly and pour into the baked pastry case. Put the meringue on top, sealing all the spaces and leaving the top rough. Bake in a moderate or slow oven until the top is golden brown. Serve hot or cold.
