It's called a pimento. The pimento is a pepper similar to the bell pepper. It has a mild flavor and is the main ingredient in pimento cheese. These are stuffed olives, by the way, and do not occur like this naturally.

You need a cool blue such as prussian blue or or a lighter cool blue such as cerulean blue depending on the type of olive green you wish to make. Basically blue and yellow make green so if you add a colour from the yellow part of the spectrum you will get some form of green. Try a light orange or a hot yellow to give an olive green. Experiment with different combinations of blue and yellow. If you have already made a basic green with blue and yellow but it is not murky enough to be olive then try adding a little red to it (choose an orangey red not a purpley red).

If you mix red with dark brown you get a maroon color. If you mix dark brown with a forest green you cab get an olive green.
