I can't say that I know, but I think that the reason that the Virgin Mary is usually showed with the infant Jesus, is that the Catholics are trying to emphasize that Jesus was born from a virgin Answer: They're probably mostly with the infant Jesus because since all Christians honor her as being God's Mother, it's natural that pictures would be representing that which we associate with her: bearing the infant Jesus.
