The are catalysts. They make it a LOT easier and more likely for some otherwise pretty improbably reactions to occur. Like all catalysts they aren't consumed by reactions they catalyse. But also present in the cells are many proteases. They breakdown proteins, including enzymes, and recycle the ingredients used to make them. And enzymes are continuously being produced, the amounts of which depend on what genes are expressed at the moment, all controlled by hundreds of hormones and other chemical signals with in and from outside the cell. So in this way the function of the cell can change in response to external cues and internal conditions.
