Capacitors are generally used in high powered automotive sound applications. The capacitor acts as a storage for power. When peak parts of a music program are played and extra power is needed to drive the amplifier and speaker, the power is drawn from the capacitor. This puts less strain on the car's battery and alternator.

What is the role of capacitor in an astable multivibrator?

The capacitor charges up with the current flowing through a resistor. The time taken is well defined by the capacitance and the resistance, and these components control the frequency.

What is the role of a capacitor at the non-inverting input of an op-amp?

The capacitor blocks the DC portion of the signal and therefore only the AC portion is amplified. i.e if the signal applied exists at a 2 Volt level for instance, after the capacitor the 2 Volts will be trimmed off.

Can you go from a 1000uf to a 1200uf capacitor with the same voltage?

Capacitance and voltage may be varied independently of one another, but the outcome depends exactly what the circuit is and what role this capacitor plays. If it's a timing capacitor, the time constant will increase. Certainly the impedance will change in a circuit where it's required to decouple a rail with ripple present; as a filter or as a coupling capacitor.
