Asafoetida, or asafetida is made by grinding up the sap (gum) that comes out of the root of a plant of the genus "Ferula" (found in Afghanistan). It smells horrible (like sweaty feet) but tastes a bit like garlic.
Typical asafoetida contains about 40-64% resin, 25% gum, 10-17% volatile oil, and 1.5-10% ash. NO SALT.
