The sharpest knife which isn't for everyday use is made out of diamond and has a blade width that is just 1 atom thick. It's used to cut super thin slices of the samples for the electron microscope in the labs. From the knives used in common knife works sharpest knives are the the single grind or chisel edge knives. As usual those have thinner edges, thus being sharper compared to their double grind counterparts (see attached link for the edge grind explanation diagram). Japanese fugubiki type knife is perhaps one of the sharpest conventional knives, single ground edge, thin knife, with low angle edge designed to cut delicate flesh of blowfish. Usuba type knives are also single ground and with very low edge angles. Typically less than 10 degree angle total. Military combat knives and other hard use knives have much thicker edges, typically 40 degree angle included or even more.
That depends on it's use.....any REAL Swiss Army knife main blade can be likened to a surgeons scalpel, and it maintains that edge throughout normal continuous use. I have also seen Buck brand knives, "after professional sharpening", that when pressed gently to the skin, will cut an inch into you.
